This is a recipe we imported from a friend in Australia. It’s brilliant on a number of levels; it tastes great, it lasts a long time in the freezer, it is quick and easy to make and it is a really flexible recipe that you can adjust to your own personal taste.
The green component is kale. Our kids aren’t big fans of kale (as in they won’t eat it at the moment and to be honest, I am not that surprised!) but they help make this snack and wilfully put handfuls of the stuff in…. just another example of the irrational nature of children!
Guidelines for making are as follows:
• 3 handfuls of kale
• 1 cup of shredded coconut
• ½ Cup of seeds (sesame, linseed, pumpkin, sunflower, etc)
• 1 cup dates
• 1 cup raisins
• ½ cup apricots
• ½ an apple
The method is basically to blitz the whole lot in a blender, press into a parchment lined tray, freeze and then cut up and store in the freezer.
Tips: blend your kale and coconut together first, the coconut helps to break down the kale and stops it being too leafy. Then add your ingredients from small to large, blitzing after each ingredient is added.
